July 27, 2026: Debunked by Nature: Regenerative Farming

Mollie Engelhart is a regenerative farmer, entrepreneur, chef, writer, and mother of five based in Texas. She is the founder of Sovereignty Ranch and The Barn, a farm-to-table restaurant rooted in nutrient-dense food and land stewardship. Formerly known as the founder of Sage Vegan Bistro in Los Angeles, Mollie’s journey took a dramatic turn as she transitioned from vegan chef to cattle rancher, guided by firsthand experience with soil health, animal systems, and the realities of food production. She is the author of Debunked by Nature, where she challenges modern assumptions about food, health, and culture through the lens of nature.

Mollie writes regularly for Acres U.S.A. and publishes a daily column in The Epoch Times, covering agriculture, policy, family, and faith. A frequent speaker, her work bridges personal story with larger systemic questions, inviting audiences to reconsider their relationship to land, food, and responsibility in an increasingly disconnected world.

June 22, 2026: Too Little, Too Much: The Hill Country Water Challenge

Carter will discuss the ecological impacts of long-term water scarcity and highlight how geospatial technologies are being used to measure vegetation loss, assess habitat vulnerability, and evaluate ecosystem resilience following major flood events, including the historic July 4th flood.

The program explores how hydrometeorological extremes — including extended drought and severe flooding — are reshaping the Texas Hill Country and placing increasing stress on riverine and riparian ecosystems.

About the Speaker: Clint Carter is the Watershed Ecologist for the Bandera County River Authority and Groundwater District, where he leads efforts focused on water quality monitoring, riparian health, invasive species management, and watershed restoration. He also serves on the boards of the Texas Riparian Association and the Kerr County River Foundation.
